Hello every one Its Easter soon so hears a few recipes and tips for your guests

there easy to cook and taste great.

Butternut Squash and Carrot Soup

Ingredients 

1 butternut squash peeled and chopped into chunks

4 carrots chopped

1 onion peeled and chopped

3 garlic cloves peeled

1 green chilly

3 vegetable stock cubes

6 sage leaves chopped

4 pints of water

Method

On a baking tray add the squash carrots onion chilly and garlic sprinkle with a little oil and season well and bake in the oven on a medium heat for 35 minutes.

Then in a large pot boil the water add the stock cubes and sage and then add the veg from the oven and simmer for 15 minutes then blend well season to taste if the soup is to thick for you add a little more water.

A tip for that large leg of lamb

you will need

1 leg of lamb

a good handful of chopped rosemary

1 large chopping board

olive oil

sea salt and black pepper.

On your chopping board spread out the rosemary evenly all over the board and sprinkle the sea salt and pepper over the board as well then rub the olive oil all over your leg of lamb then roll the lamb over the board and cover the lamb with the herbs and roast and serve with all the trimmings

Apple tart

4 large cooking apples peeled and chopped

3 table spoons of caster sugar

1 packet of shop bought puff pastry

Method

In a pot add the apple and caster sugar and cook till soft and place in a tart tin

then roll the pastry and cover the tin and trim the edges brush with a little milk and bake for 20 minutes sprinkle with a little caster sugar and serve with ice cream.
